Would be nice to have set defaults:
Some fields I wish defaults where available are:
Country
Location
Air Start
Boat
Dive Operator
Tank Size
Weights
Working Pressure
Gear

Sites work a little differently now - we'll address this after 2.0 is out.

You can already set defaults for these in preferences, though they work differently in 2.0. They are now attributes of a "tank" which you can choose to add to dives by default.
Air Start
Boat
Dive Operator
Weights
Will have to think about a nice way to do this.
Gear
Gear can all be added by default (and with groups) as of 2.0.
